Fried collard greens AKA Crunchy seaweed.

Inspired by Mr. Chow's popular appetizer "Gambei with goodies." The original recipe is a well-kept secret but what I do know is it's fried collared greens with salt and sugar. Very tasty. Done our best to copy it here. Thankyou Mr. Chow.

Fresh collard greens.
Peanut Oil (for frying)
Salt
Sugar
1 lemon 

 

Methods/steps

Wash and thoroughly dry the collard greens with a towel. They must be dry before frying.
Stack 6-10 of the leaves on top of each other then tightly roll up like a newspaper.

Use sharp knife an cut 1/4 inch slices across the rolled-up leaves. This will leave you with a large amount of collard green strips.

Heat peanut oil to 350 degrees in deep fryer. I use a handy Fry Daddy. Works great and cleans up nicely.

Place a large spoonful of the greens into the fryer and fry for 2-3 minutes or until greens are crispy.

Remove from fryer with a slotted spoon. Let excess oil drip off the greens. Allow to cool in a serving bowl.

Sprinkle salt, sugar and lemon juice over the greens and stir lightly in the bowl. Enjoy.
