8 Wild quail (Whole)

Farmers markets and gourmet grocery stores will carry farm-raised quail.

EVOO (Extra Virgin Olive Oil)
Salt & Pepper
Poultry spice mix 

 

 

Methods/steps

Lightly coat the birds with olive oil. Sprinkle salt, pepper and poultry spice mix to taste. (Any poultry spice mix will do). Stir the birds around with a wooden spoon in a bowl and let sit for 10-15 minutes.

Grill over charcoal or gas grill. Start with breast side UP and cook over medium fire for about 5 minutes. Keep the lid closed on the grill as much as possible. Turn and cook breast side down for 6 minutes. Flip the birds one more time to breast side UP and move to cooler part of grill. Let sit for 2 minutes. You're done!
