Jay's Flaming Redfish

6-10 Redfish (Red Drum) fillets  - Or any fresh fish - Black drum and Grouper work well, also.
4 Jalapenos
2 Sprigs of Green Onions
EVOO (Extra Virgin Olive Oil)
Seafood seasoning. I like Paul Prudhomme's Blackened Redfish Magic. Tasty. 
Rum (optional). 


Cut fresh fish fillets into chunks about the size of a deck of cards.
Lightly coat the fish with olive oil and seafood seasoning (to taste).
Dice the jalapenos and chop up the green onions. 

Add 3 Tablespoons of olive oil to sauce pan, skillet or wok and bring to medium heat (about 2 minutes).

Saute jalapenos in the skillet for about 3 minutes to soften. Increase to HIGH heat.

Add fish and green onions to pan and cook over hight heat for 3 minutes per side.

Optional - Pour 1 cup of rum into the sauce pan and light with a match. The alcohol will burn off leaving a sweetness to the recipe. Be careful with this step and keep the kids away.  Keep a sauce pan or skillet cover handy in case of flare-up.
