Penne a la Tito's Vodka

Our version of a classic dish.  Hard to beat.  If you want, use light cream to reduce the calories.  The vodka will enhance the flavor of the tomato sauce as the alcohol evaporates while cooking.  Try this!

1 box dried penne pasta
1 Cup of Tito's Vodka
2 teaspoons of crushed red pepper flakes
3 tablespoons of Olive Oil
3/4 Lb of proscuitto
2 cloves of minced garlic
3 tablespoons of chopped fresh curly parsley
3 tablespoons of chopped fresh basil
1 28 oz. can Roma tomatoes (whole)
2 8 oz. cans tomato sauce
1 cup light cream or heavy whipping cream. Your preference.
salt & pepper to taste

1 fresh French baguette


Additional Tips

Add the red pepper flakes to the vodka, stir and set aside.

Using a skillet, add olive oil and heat to medium heat.
Saute prosciutto for about 2 minutes, then add the parsley, garlic, basil, salt & pepper and saute for another 2 minutes or until
you've browned the proscuitto.

Add the vodka and red pepper flake mixture to the proscuitto. Let simmer for for 10-12 minutes. (This will allow most of the alcohol in the vodka to evaporate).

Crush the tomatoes with your hands and add to the vodka sauce. Stir in the 2 cans of tomato sauce and add 8 oz of water. Simmer for 15 minutes then slowly stir in the half & half or light cream and cook for 3 minutes.

Enjoy with fresh French bread!
