Pork Stir Fry

One of the recipes used on the Cocina Outdoors Grilling System.  Pork stir fry can be lean and tasty. Below is our version of an excellent pork stir fry recipe cooked on our new disc...or you can use a skillet or wok.

2 TBS low sodium soy sauce
1 TBS water
1 TBS cornstarch
1 Lb pork tenderloin (cubed)

Stir fry sauce:
Juice from two limes
1 TBS soy sauce
2 TBS rice vinegar
1 Teaspoon cornstarch
3 Teaspoons of dark sesame oil

2 TBS of peanut oil
2 TBS of minced fresh ginger root
1 Serrano or jalapeno pepper, chopped
1/4 cup chopped green onions
1/4 cup chopped fresh cilantro
1/4 cup finely chopped peanuts
1/2 cup julienned carrots
1/2 cup snow peas
1 teaspoon of chili oil
1 tablespoon of red pepper flakes. 


Cut the pork tenderloins into cubes about the size of dice and put in a medium sized bowl.  Add 2 Tablespoons soy sauce, 1 tablespoon cornstarch and 1 tablespoon of water. Mix it around so the pork is coated with the sauce. Cover and refrigerate for 30 minutes.

In a separate, smaller bowl add the lime juice, 1 teaspoon cornstarch, 1 tablespoon soy sauce, rice vinegar and sesame oil. Mix together and set aside.

Remove the pork cubes from the refrigerator. In a large skillet, wok or on a Cocina cooker, heat peanut oil on medium heat for about 4 minutes. Stir in ginger, peppers and saute for about 1 minute.  Then add the pork, carrots, snow peas and stir fry for about 6 minutes or until the pork is tender.

Reduce heat to low, pour in stir fry sauce and simmer for 5 minutes. Remove from heat and stir in chili oil, green onions and peanuts.
