Spurs Favorite Chipotle BBQ Chicken

2 Cups Chipotle BBQ Sauce (See recipe below)

8 Bone-In Chicken breasts
1/4 cup olive oil
1 Tablespoon Kosher sea salt
1 Teaspoon black pepper

Chipotle BBQ sauce:

1 Cup Heinz Chili sauce
1/4 cup Honey
1/4 cup balsalmic vinegar
2 Tablespoons worcestershire sauce
3 garlic cloves
1 tablespoon ground ancho chili powder
1 teaspoon onion powder
2 Canned in adobo chipotle chilies (seeded and chopped). 

**NOTE: We made a mistake and cooked this recipe using two cans of the adobo chipotle chilies and it was too spicy.  Use only two adobo chipotle chilies from one can. Very important.

Combine all the ingredients in a blender or food processor and blend to a smooth texture.  Store in refrigerator until ready to use. 




Heat oven to 350 degrees (set on Bake).  Line a baking sheet pan with foil and spray with non-stick spray.  Divide the Chipotle BBQ sauce into two bowls.  Use one for basting and the other for sauce once chicken is cooked.

Brush the chicken breasts on all sides with olive oil and season with salt and pepper.  Bake in the oven for 35 minutes.  Remove from oven and brush the basting chipotle BBQ sauce on all sides.  Return to oven and cook for another 5-10 minutes or until the thickest part reaches 165 degrees.  Discard the remaining basting sauce.

Serve the chicken with the remaining dish of Chipotle BBQ sauce.
